They are a brilliant and incredibly hard working young couple who are still looking and open to new ideas. It's just a palette of colours, like the spices in curry, and the range of flavours you can create with so few - just like red blue and yellow in effect, with white and black where needed. With sage from Provence or Banyuls it would have a different taste again. My sage arrived from Cheshire 16 years ago, so not the same at all due to sun and climate and evolution. The vin de sauge was lovely as an apéro, not what I expected, but it's grown in.around Riberac. I think we were lucky to get a table on the first night but they had just opened. The second night I started with a warm goat's cheese salad and followed with a risotto. My wife, as usual, eat a meat dish for her main and although I don't recall what it was she did enjoy it. The third was quinoa and the fourth, and smallest, was fermented vegetables. The smaller, second bowl was full of home-made hummus. These included a segment of baked squash and divinely sautéed cabbage as well as other vegetables. The largest contained home-made falafels on a bed of freshly cooked vegetables. I started with a tomato Gazpacho which had such a blend of flavours I was in heaven, and then followed with a 'veggie bowl'. I was reluctant about this restaurant as it had been described as French traditional and I was worried I may not find anything vegetarian on the menu, but as I asked for a table and mentioned I was 'vegetarien' the waiter responded 'no problem'.
